Fig Knutens

These are some of my favorite snacks. They require a food processor, which is a good investment for healthy eating.

  • 2 cups old-fashioned rolled oats
  • 2 cups dried mission figs, stems removed, packed semi-tightly
  • ¾ cup raw walnuts or almonds
  • ⅛ teaspoon salt
  • 2-3 tablespoons honey
  • 1 teaspoon vanilla
  1. Blend all ingredients in a food processor about 5 minutes until it is sticky enough to form into balls (and trust me it will get stickier the longer it processes!)  We like it best just when it’s sticky enough, but not over-processed.
  2. Shape dough into balls.

A good but less fantastic alternative is using raisins instead of figs, but without added honey.

Notes:
This freezes well.
