Spinach Salad with Couscous & Salmon

Ingredients

  • spinach
  • canned salmon, drained
  • prepared couscous
  • raisins (golden or regular)
  • lemon zest
  • walnuts
  • vinaigrette dressing (or balsamic vinegar and extra virgin olive oil)

Method

  1. Soak raisins and lemon zest together in enough water to cover, for ten minutes. Drain.
  2. Top spinach with couscous, smoked salmon pieces, zesty raisins, walnuts, and dressing. Source: Whole Family Nutrition
